Thumbprint Cookie Recipe with Buttercream Icing

These thumbprint cookies are a classic Christmas cookie rolled in nuts and filled with a rich buttercream icing.  They freezes well too!

Ingredients flour butter  sugar salt vanilla egg yolks walnuts powdered sugar milk food coloring

Chop walnuts and place them in a shallow bowl. Separate eggs and place yolks in a large mixing bowl and the whites in another shallow bowl.

Combine butter, sugar, vanilla, and salt with the egg yolks. Add in the flour. Using a small cookie scoop make 1-inch balls of cookie dough. Roll each ball first in the egg whites.

Then roll each ball in the chopped walnuts before placing them on a baking sheet.

Bake in 350-degree oven for 5 minutes. Remove and use your thumb make an indentation in the  each dough ball then return to the oven for 7-10 more minutes.  Cool completely.

Make the icing by combining butter and sugar. Add milk until you get a smooth consistency.  Spoon a little into each cookie indentation.
