Healthy Chocolate Zucchini Bread

Ingredients –  flour – cocoa powder –  baking powder & soda –  salt – vanilla  –  eggs – Greek yogurt – applesauce – brown sugar –  shredded zucchini – chocolate chips

Shred zucchini with a grater and squeeze as much of the liquid out as you can.

Toss the chocolate chips in a bowl with a bit of flour. This will help keep them from sinking. Save a few to place on top.

Butter and flour a standard loaf pan for easy removal.

Mix the dry ingredients together in one bowl. Mix the wet ingredients in another bowl.  Add the dry to the wet. Layer the batter into the pan alternating with the chips.

Bake for 50 minutes to 1 hour at 375 degrees or until a toothpick inserted into the center comes out clean.
