Italian Wedding Soup

A Pittsburgh favorite. Italian wedding soup, a chicken stock base with pasta, spinach, and homemade meatballs. 

Ingredients  chicken breast meatballs olive oil carrots sweet onion celery garlic chicken broth  water ditalini pasta fresh spinach salt and pepper Parmesan cheese

Mini Italian Meatballs Ingredients meatloaf mix  egg garlic Parmesan cheese Italian bread crumbs fresh basil leaves

1. Make the meatballs by combining all ingredients. 2. Scoop out a little of the mixture & roll it with oiled hands. 3. Set the meatballs on a greased baking sheet & bake for 20 mins at 350 degrees. 

1. Saute carrots, onions, and celery in olive oil for 3 - 5 min. 2. Add garlic and stir well. 3. Add broth, pasta and chicken. Simmer for 10 minutes. 4. Remove chicken and shred. Add back into broth

Add meatballs and spinach. Simmer for 5 minutes. Serve with grated Parmesan cheese on the side.
