Leftover Turkey Casserole Recipe

Use all that delicious leftover turkey to create a  heart warming creamy casserole with mushrooms and peas.

Ingredients 2 cups diced turkey 6 oz. egg noodles 2 T olive oil 2 T butter 2 T flour 1 c milk 1/2 c. chicken broth 1 T worchestershire 1/2 c. fresh peas 1 c. porcini mushrooms 1/2 c. onion 2 T parsley 1/2 t. red pepper flakes  salt and pepper

Saute onions and mushrooms in 2 tablespoons of olive oil. Add peas and continue cooking for about 2 additional minutes. Remove from heat and set aside.

Create a sauce by melting 2 T of butter and sprinkling 2 T of flour on top. Whisk to make a paste. Add milk and continue whisking on low heat. Add broth, and Worcestershire.

Combine sauce with noodles, turkey, peas and mushrooms. Then add parsley, salt and pepper and red pepper flakes.  Pour into a buttered casserole dish and bake at 350 for 30 minutes.
