Make a great lemon chicken orzo soup with this easy recipe that's a lot like your favorite Greek restaurant without leaving the house.
olive oil – orzo pasta – garlic – onion – carrots – chicken broth – eggs –chicken – lemon juice – parsley – salt and pepper
Saute carrots and onion in a large pot in olive oil for about 5 minutes. Add garlic, salt, and pepper. Stir well. Add broth and simmer for about 10 minutes.
Meanwhile, whisk eggs and lemon juice together in a small bowl. Add about 1 cup of the hot broth to the eggs mixture a little at a time stirring the mix. . Then add the egg mixture to the pot.
Add the orzo and chicken. Simmer for 10 minutes or until orzo is cooked through and serve.
