Saute carrots and onion in a large pot in olive oil for about 5 minutes.
Add garlic, salt, and pepper. Stir well.
Add broth and simmer for about 10 minutes.
Meanwhile, whisk eggs and lemon juice together in a small bowl.
Add about 1 cup of the hot broth to the eggs mixture a little at a time stirring the mix. .
Then add the egg mixture to the pot.
