Pork Tenderloin Sheet Pan Dinner

This easy recipe for making a sheet pan pork tenderloin is great for dinner on any day of the week

Ingredients

– pork tenderloin – mini potatoes –  cherry tomatoes –  olive oil –  salt and pepper –  Parmesan  –  fresh thyme –  cider vinegar –  brown sugar –  garlic

Toss the tenderloins in a large bowl with the marinade and place them on one side of a greased rimmed baking sheet.

Toss the potatoes and tomatoes in a separate bowl with olive oil, Parmesan cheese, salt, pepper, and thyme.

Place the potatoes and tomatoes on the other side of the  pan. Sprinkle sprigs of fresh thyme. Bake for 30 mins turning all  halfway through.

Check the temperature of the pork. It should read 145 degrees. Remove and let sit for 5 minutes before cutting the pork into thick slices.

Serve on a large platter with the pork in the center surrounded by the vegetables.
