Peel and slice potatoes paper-thin using a mandoline.
Make a cheese sauce by creating a roux then adding the shredded cheese.
Layer half of the potatoes in a greased pan.Pour half of the cheese sauce over top.Add remaining potatoes, and cheese sauce.
Top with remaining 1/2 cup of cheese.
Cover with foil and bake for 1 hour.
Remove foil and bake for an additional 20 minutes to brown the top.
