Easy Zucchini Latkes

You can easily make delicious latkes with zucchini instead of potatoes for a tasty side dish or appetizer.

Ingredients grated zucchini panko bread crumbs eggs olive or vegetable oil salt and pepper Parmesan cheese garlic powder

Blot grated zucchini with towels to remove moisture.   Combine zucchini, bread crumbs, egg, salt, pepper, Parmesan cheese, and garlic powder in a bowl.

Divide the zucchini mixture into four. Make a patty and gently lower it into the hot oil. Cook for 1-2 minutes or until browned and flip. Repeat with the other side.

Remove to paper towels to blot up excess oil. Serve with sour cream.
