2 - 1poundbags frozen chopped spinach - thawed and drained
1small onion - diced
2clovesgarlic - minced
2tablespoonsolive oil
1cupcream
1/2cupbutter melted1 stick
1cupgrated Parmesan cheese
1cuppanko bread crumbs
Instructions
Saute onions and garlic in olive oil in a large pan, on medium heat for a few minutes, making sure the garlic does not burn.
Add spinach and salt and pepper.
Stir and continue to saute for about 2-3 minutes.
Add cream and combine well.
Remove from heat and pour into a baking dish, approx. 9 x 11 inches
In a separate bowl combine melted butter, Parmesan and bread crumbs.
Stir until combined.
Spread over spinach.
Bake at 350 degrees for 30 minutes.
