Power Grain Bowls

Makes 2 Bowls

Ingredients
  

  • 1/2 cup dry quinoa
  • 1/2 cup dry quick farro
  • 1 cup baby kale leaves
  • 1 avocado, sliced
  • 1 lemon juiced

Instructions
 

  • Cook the farro and quinoa separately.
  • Wash and dry the baby kale. Rip and place in the bottom of each bowl
  • Add the farro one side of each bowl
  • Add the steamed quinoa on the other side.
  • Place the sliced avocado on one side.
  • Drizzle with fresh lemon juice.
  • Top with a poached egg on each bowl.
  • Serve immediately
