This black bean salad is full of crisp fresh flavors and makes a great side dish for a summer picnic.

2 cans of black beans drained 2 cups corn that has been grilled for 10 mins 2-3 cloves of garlic minced or crushed 1/2 cup red onion minced 1 medium orange or red bell pepper 1 teaspoon salt 1/2 cup olive oil 1/2 cup fresh lime juice 2 teaspoons cumin 1/2 cup Cilantro finely chopped 1/2 cup Italian flat leaf parsley finely chopped 1 teaspoon crushed red pepper flakes
Combine all ingredients together in a large mixing bowl.
Refrigerate for an hour. Tastes even better the next day.
Serve alone as a salad or as a side dish.
Substitutions:
Frozen corn instead of grilled corn on the cob.
Other herbs such as fresh basil and oregano.
