Cream of Mushroom Soup

This homemade cream of mushroom soup recipe is easy to make with from scratch with just a few basic ingredients.

Ingredients
  

  • 2 tablespoons butter
  • 10 oz. cremini mushrooms cleaned and sliced
  • 3/4 cup finely chopped sweet onion
  • 1 large clove garlic grated
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh Italian parsley chopped

Roux

  • 1 tablespoon of flour
  • 1 tablespoon of butter

Instructions
 

  • Clean and slice mushrooms
  • Saute garlic, onions and mushrooms for 15 minutes.
  • Add broth, cream, parsley, salt and pepper.
  • Bring to a boil and then turn down heat and simmer for 5 minutes.
  • Make the roux in a separate pan by melting butter and sprinkling the flour on top. whisk together and cook for about a minute.
  • Add roux to soup to thicken stirring to incorporate.
  • Simmer for an additional 5 minutes and serve.
