Cream of Mushroom Soup
This homemade cream of mushroom soup recipe is easy to make with from scratch with just a few basic ingredients.

2 tablespoons butter 10 oz. cremini mushrooms cleaned and sliced 3/4 cup finely chopped sweet onion 1 large clove garlic grated 3 cups chicken broth 1 cup heavy cream 1/2 teaspoon salt 1/4 teaspoon black pepper 2 tablespoons fresh Italian parsley chopped Roux 1 tablespoon of flour 1 tablespoon of butter
Clean and slice mushrooms
Saute garlic, onions and mushrooms for 15 minutes.
Add broth, cream, parsley, salt and pepper.
Bring to a boil and then turn down heat and simmer for 5 minutes.
Make the roux in a separate pan by melting butter and sprinkling the flour on top. whisk together and cook for about a minute.
Add roux to soup to thicken stirring to incorporate.
Simmer for an additional 5 minutes and serve.
