Ingredients
  

  • 3/4 pound unpeeled medium shrimp
  • 1.5 cups cooked wild rice mix
  • 16 oz can of crab meat drained
  • 1/2 cup English peas
  • 1/3 cup green onions chopped
  • 3/4 cup mayonnaise
  • 1 tablespoon fresh chopped flat leaf parsley
  • Juice and zest of one large lemon
  • Lettuce leaves and tomatoes for garnish

Instructions
 

  • Boil water then add shrimp and cook just until pink about 3 minutes.
  • Remove, rinse in cold water, peel and devein.
  • Combine all ingredients except mayo, lemon juice and zest.
  • Toss well then fold in mayo and lemon juice/zest.
  • Scoop onto a bed of lettuce with wedges of tomatoes to serve.
