This baked halibut with a crunchy chickpea topping was inspired by a local restaurant's Italian breadcrumb topping called ala Louie.

Ingredients
  

  • 2 - 5- ounce halibut fillets
  • 1/2 cup chickpea crumbs
  • 1/8 cup olive oil or butter
  • 2 cloves garlic grated
  • 1 teaspoon fresh parsley chopped
  • salt and pepper
  • lemon to serve

Instructions
 

  • Preheat oven to 350 degrees
  • Clean fish and set it in a baking dish that has been sprayed with vegetable oil.
  • Salt and pepper the fillets.
  • In a bowl combine chickpea crumbs, olive oil, garlic, and parsley. Mix well.
  • Divide the crumb topping evenly over both fillets.
  • Bake for 20 - 25 minutes, until the side looks opaque and can be flaked with a fork.
