Fresh Plum Cake Recipe

1.5 cups all purpose flour 1 teaspoon baking powder 1 teaspoon salt 1/2 cup butter 1 teaspoon vanilla 1 cup granulated sugar 2 eggs 4 ripe plums pitted and cut into wedges juice of 1/2 lemon 1/2 teaspoon cinnamon powdered sugar for dusting optional
Preheat oven to 350 degrees
Add the lemon juice to the plum wedges, set aside
Combine flour, baking powder, salt, and cinnamon in a bowl.
In a separate bowl cream butter and sugar.
Add eggs, one at a time. Mix well
Add vanilla and mix well.
Add 1/2 of the flour mixture to the butter and sugar mixture and mix well.
Add the remaining flour mixture and mix well.
Pour into a greased 9 x 11 baking pan.
Spread evenly.
Set plum wedges skin side up into the batter.
Bake for 30 minutes at 350 degrees.
Allow to cool and dust with powdered sugar if desired.
