Fresh Plum Cake Recipe

Ingredients
  

  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 cup granulated sugar
  • 2 eggs
  • 4 ripe plums pitted and cut into wedges
  • juice of 1/2 lemon
  • 1/2 teaspoon cinnamon
  • powdered sugar for dusting optional

Instructions
 

  • Preheat oven to 350 degrees
  • Add the lemon juice to the plum wedges, set aside
  • Combine flour, baking powder, salt, and cinnamon in a bowl.
  • In a separate bowl cream butter and sugar.
  • Add eggs, one at a time. Mix well
  • Add vanilla and mix well.
  • Add 1/2 of the flour mixture to the butter and sugar mixture and mix well.
  • Add the remaining flour mixture and mix well.
  • Pour into a greased 9 x 11 baking pan.
  • Spread evenly.
  • Set plum wedges skin side up into the batter.
  • Bake for 30 minutes at 350 degrees.
  • Allow to cool and dust with powdered sugar if desired.
