Crimp edges and poke holes in the bottom with a fork.
Refrigerate while cutting apples.
Cut apples into quarters.
Peel the skin and remove the core and seeds.
Use a mandolin to create very thin slices.
Squeeze some lemon juice (1/2 a lemon) over apple slices.
Arrange apple slices all over the pie crust.
In a small bowl combine melted butter with cinnamon.
Pour cinnamon butter mixture all over apples.
Sprinkle with coarse sugar.
Bake for 1 hour in a 350 degree oven.
Check around 30-40 to see if the edges are getting too brown. If so, cover edges with a bit of foil for the remainder of the time.
Cool and serve with a scoop of vanilla ice cream.
