2 cups dried navy beans 16 oz bag soaked in water overnight 7-9 pieces of precooked bacon chopped 1/2 cup diced onion 1 cup ketchup 1 cup light brown sugar 1/4 cup honey 2 teaspoons smoked paprika 1/4 cup dijon mustard 1 cup apple cider vinegar 1 teaspoon salt 1/4 teaspoon black pepper 3 cups water
Drain the beans that have soaked overnight and place them in a large pot. Cover with fresh water and simmer for 1 hour.
While the beans are simmering saute the bacon and onions in a Dutch oven until the onions are soft and translucent about 5 minutes.
Add ketchup, brown sugar, honey, mustard, vinegar, paprika, salt, and pepper. Stir until combined.
Drain the beans after an hour and add them to the Dutch oven mixture.
Add 3 cups of water or more until it covers the beans.
Stir, cover with a lid and bake in a 375 degree oven for 3-4 hours until the beans are soft.
Serve immediately or store in a well-sealed container for 3-4 days in the refrigerator.
