Ingredients

  • 10 ounce package of frozen cut spinach
  • 8 ounce package of cream cheese - room temperature
  • 8 ounce package of sour cream
  • 1/2 cup Parmesan
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Defrost frozen spinach and squeeze out as much excess water as possible.
  • In a large mixing bowl combine sour cream, cream cheese, Parmesan cheese, garlic powder, onion powder, cayenne, salt, and pepper.
  • Add in spinach and stir well.
  • Pour the dip mixture into a greased 9-inch baking pan.
  • Top with shredded mozzarella cheese.
  • Cover with foil and bake in the oven at 350 degrees for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes or until it starts to brown.
  • Allow it to cool slightly before serving it with tortilla chips, crackers, and slices of french bread.

Notes

You can set it under the broiler for more browning if you like.
You can make this a day ahead by placing the dip in the refrigerator and cooking it the next day.
Substitute your favorite cheeses for the Parmesan and mozzarella for a twist. Try gouda, gruyere, asiago, or any combo you like. Even a good cheddar would work.
Keep it low carb by serving it with vegetables like carrot and celery sticks and broccoli florets.
