Sweet Potato and Carrot Soup Recipe

This healthy and hearty sweet potato carrot soup is quick and easy to create with just a few ingredients. The added taste of fresh ginger gives this creamy soup a little extra zing for a tasty dish you can enjoy any day of the week.

Ingredients
  

  • 1.5 pounds sweet potatoes peeled and diced
  • 1 pound carrots peeled and diced
  • 2 tablespoons of fresh ginger grated
  • 2 tablespoons of olive oil
  • 1 medium onion diced
  • 2 fresh garlic cloves grated
  • 4 cups of chicken broth or vegetable stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Saute onions, salt, and pepper in olive oil in a large pot for about 3 - 5 minutes or until the onions turn translucent.
  • Add the garlic and saute for 30 seconds stirring to make sure it doesn't burn.
  • Then add the sweet potatoes, carrots, and broth.
  • Bring to a boil, then reduce heat and simmer for 15 minutes or until the vegetables are fork tender.
  • Add the ginger.
  • Use an immersion blender to puree the soup until it is nice and smooth. You could also transfer the soup to a blender to blend.
  • Serve immediately in small bowls or allow it to cool and ladle it into an airtight container before placing it in the refrigerator.

Notes

You can serve this with a drizzle of cream for a pretty look and a little extra yumminess.
You can leave the soup a little chunky or make it as smooth as you like.
You could try this with other root vegetables such as butternut squash and parsnips.
