Homemade Strawberry Jam

Make a small batch of refrigerator strawberry jam that requires no pectin or canning. This easy strawberry jam has a great fresh taste that will be eaten up in no time.

Ingredients
  

  • 1 pound fresh chopped strawberries approx. 3 cups
  • 1 1/4 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/2 cup water

Instructions
 

  • Clean and chop strawberries into small pieces.
  • Add all ingredients into a heavy pot or saucepan and stir together.
  • Bring to a boil then reduce to medium-low heat and simmer for 20 minutes.
  • Use an immersion blender to puree the mixture.
  • Test the jam on a small ceramic plate that has been in the freezer for 20 minutes to see if it's too runny or just right.
  • If the jam is too runny you can try cooking it down a little longer.
  • Remove from heat and let cool slightly.
  • Ladle into clean jars.
  • Once the jars are cool place the lids on and keep in the refrigerator for up to 2 weeks.

Notes

You can freeze this jam too. Use jars meant for the freezer and make sure to leave about 1/2 inch headspace at the top for possible expansion.
