Roasted Broccoli and Asparagus

This easy roasted broccoli and asparagus recipe is a great side dish for most meals and a nice option to take or serve at a family gathering.

Ingredients
  

  • 2 bunches of asparagus spears ~ 5 cups
  • 1 pound broccoli florets ~ 6 cups
  • 3/4 cup olive oil
  • 1/2 cup Parmesan Cheese shredded
  • juice and zest of one lemon
  • 1/2 cup pine nuts toasted
  • 1 teaspoon coarse salt
  • 1 tablespoon hot pepper flakes optional
  • 1 teaspoon fresh thyme leaves chopped

Instructions
 

  • Wash and cut asparagus into 2 inch pieces.
  • Wash broccolli florets and cut into 2 inch sections.
  • In a large bowl toss cut asparagus and broccoli with olive oil, salt, and pepper flakes.
  • Transfer to a sheet pan.
  • Roast in a 400 degree oven for 20 minutes, tossing about halfway through.
  • Remove from the oven. Drain excess liquid, and transfer to a serving dish.
  • Sprinkle with lemon juice, zest, Parmesan cheese, and pine nuts.

Notes

Additions and Substitutions:
Create this recipe to your own taste. You can add garlic cloves, and other spices to the roasting process.
If red pepper flakes are too hot use black pepper.
Substitute romano or asiago cheese for the parmesan cheese.
I was able to purchase a bag of broccoli florets but if you buy a head of broccoli you can cut up the stalk into small pieces. However, since they are tough parboil or microwave them first to make them a bit more tender.
