Burrata Caprese Salad or Appetizer Recipe

Enjoy the fruits of your fresh harvested tomatoes with basil and burrata cheese for a delicious appetizer or salad.

Ingredients
  

  • 1 4 ounce burrata cheese ball
  • 2 cups sliced fresh tomatoes of all kinds
  • 2 tablespoons fresh chopped basil
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • flaky sea salt and black pepper to taste
  • extra fresh basil leaves for garnish

Instructions
 

  • Drain the burrata bowl and place it into the center of a serving platter.
  • Arrange slices of harvested tomatoes and halved cherry or grape tomatoes around the burrata ball.
  • Tuck in some fresh basil leaves around the edges.
  • Make an X in the middle of the top of the burrata ball and gently peel back the sections a little.
  • Sprinkle the chopped basil over the tomatoes.
  • Drizzle extra virgin olive oil and balsamic vinegar all over the platter.
  • Finish with a dash of salt and black pepper.
  • Serve with baguette slices for an appetizer or alone as a side dish salad.

Notes

For a little sweetness, you can make a balsamic glaze by simmering a couple of tablespoons of brown sugar in a cup of balsamic vinegar. It will reduce to a thicker consistency after about 20 minutes or so and you can drizzle it on the salad instead of simple balsamic vinegar.
