Cherry Loaf  Cake

This delicious cherry cake recipe is made with sweet black cherries in a loaf pan for breakfast, dessert, or a yummy snack any time of day.

– Black cherries – Flour – Baking powder – Salt – Sugar – Butter – Eggs – Sour cream – Vanilla extract – Organic sugar, demerara sugar, or brown sugar for dusting

Ingredients:

– Pit the cherries. – Cut about 6 cherries in half and reserve for the top. – Roughly chop the remaining cherries.

– Whisk dry ingredients in one bowl.  – In another cream butter & sugar. – Add eggs. – Add vanilla and sour cream. – Add flour mixture in thirds. – Fold in 1/2 of the cherries into the batter.

Line a loaf pan with parchment. – Pour 1/2 the batter into the pan. – Sprinkle on the chopped cherries. – Spread more cake batter over top. – Place the halved cherries on top. – Sprinkle with sugar.

– Bake for one hour or until a toothpick inserted in the middle comes out clean. – Allow the cherry cake to cool on a wire rack. – Remove by pulling up the parchment paper.
