Easy Shrimp Salad

This simple shrimp salad sandwich roll recipe is a great alternative to a lobster roll. You can serve it on bread, in a wrap, or on a bed of lettuce, for a fresh light meal whenever you're craving seafood.

– raw shrimp – mayonnaise – fresh lemon juice –  lemon –  scallions  –  Old Bay seasoning

Ingredients:

Boil shrimp in salted water for a few minutes until the flesh is white. (3-4 mins) Drain and rinse in cold water. Peel, devein and chop shrimp.

Place chopped shrimp in mixing bowl. Add all other ingredients and combine.

Serve on fresh rolls or as a salad on a bed of lettuce. Leftovers can be refrigerated for a day or two.
