2 - 24ozbags of mini colored potatoes - washed and cut in half
1/2 -medium red onionsliced thin
2ribs celerysliced thin
1/2bunch of Friseeabout 1 cup, washed and torn from stem
1/2gala applecored and sliced thin into bite sized piecesDressing
1/4cupgrapeseed oil
1/2cupcider vinegar
1tablespoonMrs Dash Tomato & Garlic seasoning
2tablespoonsugar
Juice of a whole lemon
1/2teaspoonof Dijon mustard
Instructions
Boil the potatoes until you can pierce them with a fork, about 10 mins. Drain and rinse with cold water.
In the meantime pour warm pickling liquid over onions.
Combine potatoes, onions, apples, celery and frisee.
Toss with dressing and chill until ready to serve.
