Spinach Casserole with Cheesy Panko Bread Crumbs

2 - 1 pound bags frozen spinach chopped - thawed and drained 1 small onion - diced 2 cloves garlic - minced 2 tablespoons olive oil 1 cup heavy cream 1/2 cup butter melted 1 stick 1 cup grated Parmesan cheese 1 cup panko bread crumbs
Saute onions and garlic in olive oil in a large skillet, on medium heat for a few minutes, making sure the garlic does not burn.
Add spinach and salt and pepper.
Stir and continue to saute for about 2-3 minutes.
Add cream to the spinach mixture and combine well.
Remove from heat and pour into a baking dish, approx. 9 x 11 inches
In a separate bowl combine melted butter, Parmesan and bread crumbs.
Stir until combined.
Sprinkle over spinach.
Bake in a 350 oven for 30 minutes.
