Ingredients
  

  • 2 tablespoons of olive oil
  • 2 large garlic cloves grated
  • 1/2 cup diced sweet onion
  • 1 cup diced red bell pepper
  • 3/4 cup chicken broth
  • 1/2 cup cream
  • salt and pepper to taste
  • 1/2 teaspoon red pepper flakes optional
  • 1 pound boneless chicken breast grilled and sliced
  • 1 pound penne or other short pasta cooked al dente
  • 12 ounces of fresh snap peas steamed or blanched

Instructions
 

  • In a large saute pan heat the olive oil on medium heat.
  • Add onions, garlic and red pepper. Saute for a few minutes until the vegetables are wilted.
  • Add chicken broth and cream.
  • Cover and simmer for 5 minutes on low heat.
  • Remove from heat and transfer to a food processor to puree.
  • Pour sauce back into saute pan.
  • Add chicken and simmer for approximately 5 more mins to cook the chicken through.
  • Add snap peas and cooked pasta. Stir well.
  • Serve immediately with shredded Parmesan cheese.
