2 tablespoons of olive oil 2 large garlic cloves grated 1/2 cup diced sweet onion 1 cup diced red bell pepper 3/4 cup chicken broth 1/2 cup cream salt and pepper to taste 1/2 teaspoon red pepper flakes optional 1 pound boneless chicken breast grilled and sliced 1 pound penne or other short pasta cooked al dente 12 ounces of fresh snap peas steamed or blanched
In a large saute pan heat the olive oil on medium heat.
Add onions, garlic and red pepper. Saute for a few minutes until the vegetables are wilted.
Add chicken broth and cream.
Cover and simmer for 5 minutes on low heat.
Remove from heat and transfer to a food processor to puree.
Pour sauce back into saute pan.
Add chicken and simmer for approximately 5 more mins to cook the chicken through.
Add snap peas and cooked pasta. Stir well.
Serve immediately with shredded Parmesan cheese.
