2 quarts vegetable broth 1 sweet onion diced 2 tablespoons of olive oil 1 clove garlic minced or grated 2 carrots cleaned and sliced thinly approx. 2/3 cup 2 celery ribs cleaned and sliced thin approx. 1/2 cup 2 10 oz packages of baby portabella mushrooms 3/4 cup half and half cream 12- ounce package of frozen gnocchi 1/2 teaspoon ground thyme 1 teaspoon salt 1/4 teaspoon red pepper 1/4 teaspoon black pepper
Saute onion, carrots, and celery until softened for about 5 minutes.
Add mushrooms, thyme, red pepper, salt, black pepper, and garlic.
Cook until most of the water has cooked out of the mushrooms about 7 minutes.
Add vegetable stock.
Bring to a boil and then add the frozen gnocchi.
Cook for 3 minutes.
Reduce heat and add half and half.
Simmer for 1 additional minute then serve.
