2 medium zucchini (grated) about 3 cups 1/4 cup onion finely chopped 2 large eggs beaten 3/4 cup Italian bread crumbs 3/4 cup Parmesan cheese grated 2 tablespoons fresh parsley chopped 1/2 teaspoon salt 1/4 teaspoon black pepper
Wash and trim the tops and bottoms of the zucchini
Shred the zucchini with a hand grater or food processor
Remove as much excess moisture from the zucchini as possible with paper towels.
Combine shredded zucchini with the remaining ingredients n a large mixing bowl.
Scoop and shape the mixture into 1.5 inch balls and place them on a baking sheet that has been sprayed with oil.
Bake in a 350 degree oven for 30 minutes.
Remove and serve with marinara or horseradish dipping sauce.
