Parmesan Zucchini Bites

Ingredients
  

  • 2 medium zucchini (grated) about 3 cups
  • 1/4 cup onion finely chopped
  • 2 large eggs beaten
  • 3/4 cup Italian bread crumbs
  • 3/4 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Wash and trim the tops and bottoms of the zucchini
  • Shred the zucchini with a hand grater or food processor
  • Remove as much excess moisture from the zucchini as possible with paper towels.
  • Combine shredded zucchini with the remaining ingredients n a large mixing bowl.
  • Scoop and shape the mixture into 1.5 inch balls and place them on a baking sheet that has been sprayed with oil.
  • Bake in a 350 degree oven for 30 minutes.
  • Remove and serve with marinara or horseradish dipping sauce.

Horseradish dipping sauce

  • Combine 1 tablespoon of creamy horseradish with 1 tablespoon of fresh lemon juice, and 2 tablespoons of mayonnaise. Mix well
