    Make Tasty Zucchini Bites in Under an Hour

    This zucchini bite recipe is perfect for all that extra squash bounty you or your neighbor is growing. Baked in the oven for a healthy delicious appetizer.

    You can usually buy zucchini in the store all year round. However, if you grow or know anyone who grows zucchini then you may be looking for ways to use it up during the vast summer harvest.

    Why not make an easy, tasty appetizer?

    Grated zucchini, a hand grater and the bottom portion of a zucchini on a chopping board.

    How to Make Zucchini Bites

    Start by grating the zucchini. I use the hand grater above but you could also use a box grater or your food processor.

    Next, do your best to remove any liquid from the zucchini. Place it on some paper towels and blot out as much excess water as possible.

    Combine the grated zucchini with eggs, cheese, breadcrumbs, and other seasonings for a delicious mix. This is very similar to my crab cake mixture sans the Old Bay and Parmesan cheese added in.

    I used a cookie scoop to create the 'bite-sized' balls but a regular teaspoon is fine. You could make them larger but then they really wouldn't be bites. If you do decide to create larger pieces you'll probably need to cook them in the oven for a larger period of time.

    Tip: Rub a little oil on your hands before rolling. This helps keep the batter from sticking and allows you to roll nicely shaped balls.

    Bake them in a 350 degree oven for 30 minutes. If you want you can spray a little oil on top to help them brown up but it's not necessary.

    You could also fry these guys in batches in a pan with some oil on the stove or use your air fryer for an even quicker result.

    Serve these yummy zucchini bites as a party appetizer or side dish with a side of marinara sauce, ranch dressing, or some homemade horseradish sauce.

    Equipment

    • Hand grater
    • Baking sheet

    Ingredients
      

    • 2 medium zucchini (grated) about 3 cups
    • 1/4 cup onion finely chopped
    • 2 large eggs beaten
    • 3/4 cup Italian bread crumbs
    • 3/4 cup Parmesan cheese grated
    • 2 tablespoons fresh parsley chopped
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions
     

    • Wash and trim the tops and bottoms of the zucchini
    • Shred the zucchini with a hand grater or food processor
    • Remove as much excess moisture from the zucchini as possible with paper towels.
    • Combine shredded zucchini with the remaining ingredients n a large mixing bowl.
    • Scoop and shape the mixture into 1.5 inch balls and place them on a baking sheet that has been sprayed with oil.
    • Bake in a 350 degree oven for 30 minutes.
    • Remove and serve with marinara or horseradish dipping sauce.

    Horseradish Dipping Sauce

    • Combine 1 tablespoon of creamy horseradish with 1 tablespoon of fresh lemon juice, and 2 tablespoons of mayonnaise. Mix well

      At what temp and how long would you cook these in the air fryer?

        Lori, I haven't tried them in an air fryer. However, I've read that in general you should reduce the temperature and cook for less time. So something like 300 degrees for 20 minutes. I'm sure you could find a good oven to air fryer conversion online.

        Maureen, I haven't tried it yet but here's what I would do. I would place them in a freezer bag or container with the least amount of air. Then when I wanted to serve them I'd let them defrost in the refrigerator or on the counter. Then I would reheat them slowly in the oven. I would not use the microwave. I think they would be soggy if you used the microwave. Let me know if you try it.
