Air Fryer Arancini Recipe

These Italian rice balls are made in the air fryer to cut down on the fat, mess and smell of traditional deep fried arancini.

Equipment

Ingredients
  

  • 2 cups Precooked and cooled risotto
  • 2 eggs beaten
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese plus a little extra for garnish
  • 2-3 mozzarella string cheese sticks
  • olive oil spray
  • 1 cup marinara sauce
  • parsley for garnish

Instructions
 

  • Beat the eggs in a shallow bowl.
  • Combine the Panko breadcrumbs with the Parmesan cheese in another bowl.
  • Scoop some of the risotto into your hand and press the middle to make a hole.
  • Fill the hole with a 1/2 inch piece of mozzarella string cheese.
  • Close the risotto over the cheese and roll into a ball using extra rice if needed.
  • Roll the rice ball into the bowl of beaten eggs.
  • Then roll the ball into the breadcrumb mixture.
  • Set the breaded arancini on a tray.
  • Continue until all the risotto is gone.
  • Set 5 of the risotto balls (arancini) in an air fryer.
  • Spray with olive oil spray.
  • Air Fry at 400 degrees for 6-7 minutes.
  • Flip the rice balls and spray again.
  • Air fry for 5 minutes.
  • Remove and complete a second batch.
  • Serve immediately with marinara sauce.

Notes

Change up the flavors by using Italian bread crumbs with herbs and different grated cheese such as Romano or Asiago.
Use different kinds of sauce for dipping such as pesto, spicy arrabbiata, or alfredo.
