Baked Crab Balls

1 pound lump crab meat 1/3 cup mayonnaise 2 teaspoons lemon juice zest lemon 2 large eggs 2 teaspoons old bay seasoning 1/4 teaspoon black pepper pinch of salt 1 tablespoon fresh chopped parsley 1/2 teaspoon tabasco sauce or other hot sauce optional 1 teaspoon olive oil 1 cup panko bread crumbs
Drain any water from the crab meat.
Combine all ingredients in a large mixing bowl.
Place in the refrigerator for 30 minutes or longer.
Use a teaspoon to scoop out a small amount of the crab mixture and gently roll it into a ball.
Place the crab ball into a separate bowl of panko breadcrumbs and coat it all around.
Place on a baking sheet that has been greased with olive oil or cooking spray.
Continue until you've filled the baking sheet.
Bake in a 400 degree oven for 15 minutes or until the crab balls are toasted and cooked through.
Serve with lemon wedges and cocktail sauce.
