Blueberry Brown Betty

This tasty dessert is made with fresh blueberries and breadcrumbs for a sweet treat called Blueberry Brown Betty.

Ingredients
  

  • 4 cups fresh blueberries ~ 2 pints
  • juice of 1/2 a lemon ~ 2 tablespoons
  • 2.5 cups panko bread crumbs
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup melted butter
  • 1/2 cup brown sugar

Instructions
 

  • Preheat oven to 350 degrees
  • Grease an 8 x 8 in baking pan
  • Toss the blueberries with lemon juice, cinnamon, and brown sugar.
  • In a separate bowl combine breadcrumbs and melted butter.
  • Add about 1/2 of the berries to the baking pan.
  • Top with half of the breadcrumbs.
  • Repeat
  • Cover with aluminum foil and bake for 40 minutes.
  • Remove the foil and place the pan under the broil for 1-2 minutes to brown the top. This will happen very quickly.
  • Serve warm plain or with vanilla ice cream or whipped cream.

Notes

Make this with apples or other fresh fruit.
Consider placing a cookie sheet under the baking pan to catch any overflow.
