Brookies with Homemade Cookie Dough and Box Brownie Mix

Ingredients
  

Brownie Batter Base

  • Brownie mix
  • 1 Large Egg
  • 1/3 cup Vegetable oil

Chocolate Chip Cookie Layer

  • 2 cups All purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Butter (room temperature)
  • 1/2 cup Granulated sugar
  • 1 cup Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 12 ounce bag Semi Sweet Chocolate chips

Instructions
 

  • Preheat oven to 350 degrees
  • Line a 9 x 13 inch baking pan with parchment paper.
  • In a medium mixing bowl, combine the brownie mix with one egg, 1/3 cup of vegetable oil, and 1/4 cup of water. (or whatever the box calls for)
  • Spread the brownie batter into the prepared baking pan.
  • In a small mixing bowl, whisk together the flour, baking soda, and salt.
  • In a large mixing bowl, use a hand mixer or a stand mixer to cream together the butter with the white sugar and brown sugar until smooth and creamy.
  • Add two eggs and one teaspoon of vanilla extract to the sugar mixture and mix well.
  • Add the flour mixture to the sugar mixture about 1/3 at a time, mixing in between.
  • Add the chocolate chips to the cookie batter and mix well.
  • Using a large cookie scoop, drop cookie dough on top of the brownie batter in four rows of five.
  • Bake in the center of the oven for 30-35 minutes.
  • Remove from the oven, and after about 10 minutes, carefully lift the parchment onto a cooling rack.
  • Allow the brookies to cool for about 30 minutes or longer before cutting them into bars.
  • Cut the brookies into 20 large pieces or 40 smaller bars.
  • Store the brookies in an airtight container for a few days if necessary.
