Instructions
Preheat oven to 400 degrees F
Make the meatballs by combining ground chicken, panko bread crumbs, beaten egg, chopped parsley, onion powder, garlic powder, salt and pepper.
Divide the meatball mixture into four portions and roll five meatballs from each.
Place the meatballs on a parchment lined baking sheet and bake for 25 minutes or until lightly browned.
Meanwhile, make the sauce by sauteing onions and red pepper in olive oil in a large skillet for a few minutes. Add brown sugar, crushed pineapple with juice, red pepper flakes, ginger, water, and Tamari (or soy). Stir well.
Simmer for 5 minutes or more to reduce.
Add meatballs to the sauce and coat well. Simmer for another minute or two.
Serve with rice and fresh pineapple chunks.
Notes
You could change the protein and make pork, beef, or ground turkey meatballs.Store any leftovers in the fridge in an airtight container for a few days and reheat in the microwave.
