Place the chicken in a pot covered with water and add some spices to the water, such as peppercorns, salt, and herbs. Bring to a boil, then simmer for 15 minutes.
Place chicken, mozzarella cheese, cream cheese, salt, pepper, paprika, chopped parsley, and onion powder in a food processor. Blend until all ingredients come together.
Spread 1/4 of the chicken mixture thinly onto a flour tortilla.
Roll up the tortilla and cut off the ends. Then cut it into three equal pieces.
Repeat with the remaining chicken mixture and tortillas.
Place the cut tortilla pinwheels into a muffin pan that has been sprayed with cooking oil.
Bake in a 400 degree oven for 15 minutes.
Allow the pinwheels to cool slightly before serving. Cut them in half for more bites. Serve with dipping sauce.
Make the dipping sauce by combining the cottage cheese, milk, ranch seasoning, and lemon juice in a blender. Keep the dipping sauce in an airtight container in the refrigerator until ready to serve.
