Instructions
Preheat the oven to 350 degrees.
Whisk together the dry ingredients: flour, cocoa, baking soda, and salt.
In a separate large bowl, cream together butter and granulated sugar until smooth.
Add the eggs and vanilla to the butter and sugar and mix well.
Add the flour and cocoa mixture to the butter and sugar mixture about 1/3 at a time mixing well each time.
Refrigerate for 1 hour to chill.
Remove the chilled dough from the refrigerator and use a small cookie scoop to portion out some dough and roll it in your hands.
Roll the cookie dough balls into the powdered sugar and place on a baking sheet.
Bake for 8 - 10 minutes.
Remove and wait 5 minutes before transferring the cookies to a wire rack.
Notes
You may need to stir the powdered sugar after rolling some of the cookie balls, as it will tend to stick together.Store in an airtight container for up to a week or freeze them in a freezer bag or freezer-safe container for the future.
