1.5 pounds chicken breast meat 1 pound pineapple .5 red onion ~ 1 cup 1 large red bell pepper 1 large yellow bell pepper Sauce 2 tablespoons honey 1/3 cup lemon juice 1/3 cup pineapple juice 1 teaspoon ground ginger 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon red pepper flakes 1 teaspoon garlic powder
Preheat oven to 375 degrees
Chop the chicken, peppers, onion, and pineapple into similar bite sized pieces.
Whisk all the ingredients for the sauce together in a small bowl.
Toss the sauce with the chicken, veggies, and pineapple in a large bowl.
Spread everything onto a sheet pan in a single layer.
Bake in a 375 degree oven for 20 minutes.
Remove and stir everything around, then bake for an additional 20 minutes.
Place the pan under the broiler for 5 minutes to brown if desired.
Remove and serve over rice.
