Pumpkin Pie Spice Cookies

Here's an easy recipe for pumpkin pie spice sugar cookies that makes a large amount of cookies at around 5 dozen per batch. Great for bake sales or freezing for the future.

Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar firmly packed
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoon pumpkin pie spice or more
  • 1 1/2 cups old fashioned oats
  • 1 cup chopped pecans

Instructions
 

  • Preheat oven to 375 degrees
  • Cream together butter and sugars in a large bowl with a hand mixer or stand mixer.
  • Add vanilla and eggs, mix well.
  • In a separate bowl combine the dry ingredients, flour, baking soda, salt and pumpkin pie spice.
  • Add 1/2 of the flour mixture to the butter and mix well.
  • Add the remaining flour mixture and mix well.
  • Add oats and pecans.
  • Drop spoonfuls of the cookie dough (or use a small cookie scoop) on cookie sheets and bake for approx. 8 minutes or until golden brown.
  • Cool on a wire rack.
  • Makes 5-6 dozen.

Notes

Some people tell me that they would prefer more spice flavor so I suggested doubling the pumpkin pie spices to one tablespoon.
