Spinach and Ricotta Pita Bread Pizza

Here's a great way to get a lot of protein in your lunch without a ton of carbs and still be delicious. It's a spinach and ricotta pizza made with pita bread.

Ingredients
  

  • 4 pita bread loaves
  • 2 tablespoons of olive oil
  • 1 box frozen chopped spinach 10 oz thawed and drained
  • 1/2 onion diced
  • 1/2 - 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese

Instructions
 

  • Heat olive oil in a pan. Add onions and saute until translucent about 2 minutes. Add spinach and stir well.
  • Cook spinach and onions for about 5 minutes on medium heat, then remove from heat.
  • Spread 1/4 - 1/2 cup of ricotta cheese on a pita loaf.
  • Top with spinach mixture.
  • Sprinkle with mozzarella cheese.
  • Heat under broiler until cheese is golden brown, about 5 minutes.
  • Remove and serve.
