Shrimp salad rolls are easy to make and something you won't find at a restaurant in many towns. Why not make some yourself.

1 pound raw shrimp 1/2 cup mayonnaise 2 tablespoons fresh lemon juice zest of one lemon 1/2 cup scallions diced 1 tablespoon Old Bay seasoning
Boil shrimp in salted water for a few minutes until the flesh is white. (3-4 mins)
Drain and rinse in cold water.
Peel, de-vein, and chop shrimp.
Place chopped shrimp in mixing bowl.
Add all other ingredients and combine.
Serve on fresh rolls, as a salad on a bed of lettuce.
Can be refrigerated for a day or two.
