Shrimp Salad Sandwich Rolls

Shrimp salad rolls are easy to make and something you won't find at a restaurant in many towns. Why not make some yourself.

Ingredients
  

  • 1 pound raw shrimp
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • zest of one lemon
  • 1/2 cup scallions diced
  • 1 tablespoon Old Bay seasoning

Instructions
 

  • Boil shrimp in salted water for a few minutes until the flesh is white. (3-4 mins)
  • Drain and rinse in cold water.
  • Peel, de-vein, and chop shrimp.
  • Place chopped shrimp in mixing bowl.
  • Add all other ingredients and combine.
  • Serve on fresh rolls, as a salad on a bed of lettuce.
  • Can be refrigerated for a day or two.
