1poundmedium cooked shrimpchopped into bite sized pieces
2-3tablespoonsof olive oil
1/2cupchopped sweet onion
1/3cupdiced carrots
4cups1 qt vegetable broth
1can12 oz evaporated milk
1cupAmaranth
1tablespoonOld Bay Seasoning
1/4teaspoonground black pepper
1/4teaspoonsalt
1/2teaspoonred pepper flakes
Instructions
Saute onions and carrots in olive oil for a few minutes
Add Old Bay, salt and pepper and saute for a few more minutes.
Add broth and bring to a boil.
Add amaranth, lower heat, cover and simmer for 20 minutes
Add shrimp and crab, stir well.
Add evaporated milk and red pepper flakes.
Simmer for 3-5 minutes until heated through and serve.
