This spicy green chile corn casserole is super easy to make and is perfect for the holidays or any time you get together with a large group.

Ingredients
  

  • 1/4 cup melted butter
  • 2 eggs
  • 1 15 oz can of creamed corn
  • 1 15 oz can of yellow corn (drained)
  • 2 4 oz cans of hot green chiles
  • 1 8.5 oz box of Jiffy corn mix
  • 1 cup sour cream

Instructions
 

  • Whisk the eggs together with the melted butter
  • Add all other ingredients
  • Pour into a 9x13 glass baking dish that has been sprayed with cooking spray
  • Bake at 350 degrees for 40 minutes
  • Cool slightly and serve.

Notes

If you would like a thicker serving you can easily double this recipe and use the same pan. The casserole will reach to the top of the glass pan, double the height.
