1 cup flour 1/4 cup cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon vanilla extract 1 egg 1/4 cup non-fat Greek plain yogurt 1/2 cup applesauce 1/2 cup brown sugar 1 1/2 cups shredded zucchini squeezed well to remove liquid 3/4 cups chocolate chips 60% cacao
Preheat oven to 375 degrees
Grease and flour a bread loaf pan
Toss the chocolate chips in a bowl with a bit of flour
Mix the flour, cocoa powder, baking powder, baking soda, and salt together in a bowl.
In another bowl mix the egg, zucchini, applesauce, yogurt, vanilla, and brown sugar.
Add the dry ingredients into the wet ingredients and mix until just combined.
Fold in 1/3 of the chocolate chips.
Pour half of the batter into the prepared loaf pan.
Sprinkle 1/2 of the remaining chocolate chips on top.
Pour the remaining batter.
Sprinkle the remaining chocolate chips on top.
Bake for 50 minutes to 1 hour or until a toothpick inserted into the center comes out clean.
