Stuffed Pepper Soup

Try this delicious and hearty stuffed pepper soup recipe. It has all of the great flavor of stuffed peppers without all the extra work.

Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion diced ~ 1.5 cups
  • 2 green bell peppers diced ~ 2 cups
  • 28 oz. can of diced tomatoes
  • 1 quart of beef broth
  • 1 cup of uncooked long grain rice
  • salt and pepper to taste

Instructions
 

  • Saute onions in olive oil for a few minutes.
  • Add ground beef, salt, and pepper.
  • Once the beef is browned through, add the peppers, tomatoes, and beef broth.
  • Bring to a boil.
  • Add rice and reduce heat to low, cover the pot and simmer for 35 - 40 minutes.
