Core apples, cut into quarters, and use a mandolin to make thin slices.
Pour lemon juice over the apple slices and set aside.
In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
In a large mixing bowl, cream the butter and sugar.
Add eggs and mix well.
Add vanilla and cider and mix well.
Add the flour mixture to the butter and sugar mixture a little at a time mixing well between.
Fold in the apples, but keep some for the top garnish.
Pour the batter into the prepared loaf pan.
Place a layer of apple slices on top.
Mix the crumble topping together in a small bowl.
Sprinkle the crumble topping over the apples.
Bake at 350 degrees for 50 minutes.

If you are using a metal pan, your bread may bake quicker. Check it at 30-40 minutes to see if it's done.While you want the crumb topping to be crispy, if you notice the top is browning too quickly, cover the pan with aluminum foil until it is done baking.
