Apple Coffee Cake Recipe

This super easy apple coffee cake is fresh and super moist. Great for breakfast or any time of day.

Ingredients
  

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups sugar
  • 3/4 cups butter softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 3 cups apples peeled and sliced

Crumble Topping

  • 3/4 cup light brown sugar
  • 1 cup all purpose flour
  • 3/4 cup butter melted
  • 1 teaspoon cinnamon

Instructions
 

  • Whisk the flour, baking soda, salt, and cinnamon together in a bowl.
  • In a large mixing bowl cream together the softened butter, vanilla, and sugar.
  • Add one egg at a time and mix well.
  • Add the dry ingredients to the butter and sugar about 1/3 - 1/2 at a time.
  • Fold in the apples.
  • Pour the batter into a greased 9 x 13 inch baking pan.
  • Create the crumble topping in another bowl by mixing melted butter, brown sugar, flour, and cinnamon.
  • Place drops of the topping on top of the batter and spread it evenly all over.
  • Bake the coffee cake in a 350 degree oven for 50 minutes.
  • If you like you can sprinkle a little powdered sugar on the cooled cake.
  • Cover with plastic or store it in an airtight container for a few days.
