Apple Coffee Cake Recipe
This super easy apple coffee cake is fresh and super moist. Great for breakfast or any time of day.

2 cups all purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1.5 cups sugar 3/4 cups butter softened 2 large eggs 1/2 teaspoon vanilla extract 3 cups apples peeled and sliced Crumble Topping 3/4 cup light brown sugar 1 cup all purpose flour 3/4 cup butter melted 1 teaspoon cinnamon
Whisk the flour, baking soda, salt, and cinnamon together in a bowl.
In a large mixing bowl cream together the softened butter, vanilla, and sugar.
Add one egg at a time and mix well.
Add the dry ingredients to the butter and sugar about 1/3 - 1/2 at a time.
Fold in the apples.
Pour the batter into a greased 9 x 13 inch baking pan.
Create the crumble topping in another bowl by mixing melted butter, brown sugar, flour, and cinnamon.
Place drops of the topping on top of the batter and spread it evenly all over.
Bake the coffee cake in a 350 degree oven for 50 minutes.
If you like you can sprinkle a little powdered sugar on the cooled cake.
Cover with plastic or store it in an airtight container for a few days.
