This easy apple coffee cake recipe with seasonal apples and a sweet crumble topping makes a great breakfast or sweet treat any time of day.
Coffee cake with fresh apples and cinnamon is on the menu today. It's very sweet and tastes like dessert but hey, so do donuts. You can start your day with a hot cup of coffee and a piece of this delicious cake or cut a piece after dinner for dessert with a scoop of vanilla ice cream.

Crumble Topping

Instructions
Step 1. Peel and cut apples into small slices.
Step 2. Whisk together flour, baking soda, cinnamon, and salt.
Step 3. In a large mixing bowl use an electric mixer to cream the butter and sugar together. Then add the vanilla and one egg at a time mixing well.
Step 4. Add the flour mixture to the butter and sugar 1/3 or 1/2 at a time until well combined.
Step 5. Fold in the apples.
Step 6. Spread the apple coffee cake batter into a 9 x 13 inch greased baking pan. Use your hands or a spatula to spread it evenly in the pan.
Step 7. Make the crumb topping in another mixing bowl by mixing brown sugar, flour, cinnamon, and melted butter.
Step 8. Drop spoonfuls of the crumble topping around the top of the batter.
Step 9. Spread the topping evenly all over.
Step 10. Bake the cake in a 350 degree preheated oven for 50 minutes.
Allow the apple coffee cake to fully cool at room temperature before covering it with plastic and/or storing it in an airtight container.
Options and Substitutions
1. I like to use crisp sweet apples such as Honeycrisp, Cosmic, and Sugarbee. They have amazing flavor and hold up well in the cake. In a pinch, any kind of apple, such as a traditional Granny Smith will do.
2. Add 1/2 cup of old fashioned oats or chopped walnuts to the topping for added texture.
3. You could use oil or shortening instead of butter in the batter. However, I don't think it would taste as good.
Though some people don't like the word "moist," it's a great descriptor for this sweet and tasty cake.

- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1.5 cups sugar
- 3/4 cups butter softened
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 3 cups apples peeled and sliced
Crumble Topping
- 3/4 cup light brown sugar
- 1 cup all purpose flour
- 3/4 cup butter melted
- 1 teaspoon cinnamon
Instructions
- Whisk the flour, baking soda, salt, and cinnamon together in a bowl.
- In a large mixing bowl cream together the softened butter, vanilla, and sugar.
- Add one egg at a time and mix well.
- Add the dry ingredients to the butter and sugar about 1/3 - 1/2 at a time.
- Fold in the apples.
- Pour the batter into a greased 9 x 13 inch baking pan.
- Create the crumble topping in another bowl by mixing melted butter, brown sugar, flour, and cinnamon.
- Place drops of the topping on top of the batter and spread it evenly all over.
- Bake the coffee cake in a 350 degree oven for 50 minutes.
- If you like you can sprinkle a little powdered sugar on the cooled cake.
- Cover with plastic or store it in an airtight container for a few days.

Anyway, I made this yummy cake today for our Christmas morning breakfast and it turned out great - it was a home run for sure! There were 2 things I did differently:
1. The topping. I decided to just mix the brown sugar and cinnamon together and sprinkled it on top before baking. It turned out fine.
2. I baked it in a 9" springform pan because I thought it would be easier to remove. The cook time was exactly the same, and it was delicious.
This recipe a truly a keeper!
