In a large heavy saucepan melt the butter over medium high heat.
Whisk in the flour until bubbling and well combined.
Add the half and half and beer, whisking all the time.
Add spices and continue whisking.
Add the shredded cheeses and whisk until smooth and creamy.
Remove from heat and pour into a serving bowl surrounded by pretzel bites, chips and cut up vegetables.
Notes
For the beer, I chose a nice IPA we had in the fridge, but you can use any ale, stout, or even a non-alcoholic beer for this recipe.The sauce will be somewhat thin while on the stove but will thicken as it cools.You can reheat it in the microwave if it gets too cool later.I served mine with soft pretzel bites, tortilla chips, and celery sticks, but you could also serve crackers, baguette slices, and other vegetables such as carrots, cauliflower, or broccoli florets.
