Try this easy beer cheese dip recipe that you can make at home to enjoy with the family for any event or be the one to bring it to the party.

Bowl of beer cheese dip surrounded by pretzel bites, tortilla chips and celery sticks.

Pretzels and beer cheese is something we often order at a brewery or local restaurant with our friends. So when my brother invited us over to watch the game, I thought it would be a good one to bring to the party.

    Ingredients

    • butter
    • all-purpose flour
    • half and half
    • beer (an IPA is a good choice)
    • cheddar cheese
    • gruyere cheese
    • cayenne pepper
    • onion powder

    How to Make Beer Cheese

Step 1. Shred your cheese. Cheddar cheese is an obvious choice however, I also used some gruyere because it has a fantastic taste and melts better than cheddar.

Step 2. Make a roux by melting 3 tablespoons of butter in a large saucepan. Then, sprinkle in 3 tablespoons of flour. Get that whisk going to make sure there are no lumps.

Step 3. Add half and half, beer, and spices, all the while whisking to keep it nice and smooth.

Step 4. Finish the dip by adding in the shredded cheese and whisking until melted and smooth. The consistency may be a little thin, however, this will thicken as it cools.

Serve the beer cheese dip in a bowl surrounded with soft pretzel bites, tortilla chips, and celery sticks for those watching their carb intake. You can also serve it with crackers, baguette rounds and other cut up veggies.

If the dip cools down too much, you can reheat it in the microwave. Just set it for 10 -20 seconds at a time, stirring in between until you get the level of heat you want.

Who knows, it just might be so good that it gets gobbled up right away.

    Equipment

    • saucepan
    • Wire Whisk

    Ingredients

    • 3 tablespoons butter
    • 3 tablespoons all-purpose flour
    • 3/4 cup half and half
    • 1 cup beer an IPA is a good choice
    • 1 cup shredded sharp cheddar cheese (7 oz)
    • 1/2 cup shredded gruyere cheese (3.5 oz)
    • 1 teaspoon cayenne pepper
    • 1 teaspoon onion powder

    Instructions

    • In a large heavy saucepan melt the butter over medium high heat.
    • Whisk in the flour until bubbling and well combined.
    • Add the half and half and beer, whisking all the time.
    • Add spices and continue whisking.
    • Add the shredded cheeses and whisk until smooth and creamy.
    • Remove from heat and pour into a serving bowl surrounded by pretzel bites, chips and cut up vegetables.

    Notes

For the beer, I chose a nice IPA we had in the fridge, but you can use any ale, stout, or even a non-alcoholic beer for this recipe.
The sauce will be somewhat thin while on the stove but will thicken as it cools.
You can reheat it in the microwave if it gets too cool later.
I served mine with soft pretzel bites, tortilla chips, and celery sticks, but you could also serve crackers, baguette slices, and other vegetables such as carrots, cauliflower, or broccoli florets.
